Effects on Your Baking

The biggest change — honey has a distinctive floral sweetness that corn syrup completely lacks. This can be wonderful in some recipes (honey pecan bars) but unwanted in others where you need a neutral sweetener. Honey is also about 20% sweeter than corn syrup, so reduce other sugars accordingly.
